◆削皮刀使用方式：
刀片與食材垂直使用，可前後來回削皮，兩手皆可使用。
它可代替刀子做切片，如小黃瓜片、紅蘿蔔片、薑片；
也可用於有層次的蔬菜，如高麗菜、洋蔥，對半切後，和食材垂直面切，就可以做涼拌沙拉用的細絲了。

◆刨絲刀使用方式：
刀片與食材垂直使用，只能用右手順勢而刨。
可刨牛蒡絲、薑絲、紅蘿蔔絲、白蘿蔔絲、小黃瓜絲、芋頭絲...等。
